Thank you for filing this feature request.
To create a keyframe for selected properties, you can choose the Animation > Add Keyframe command. (The name of this command will change if you only have one property selected, ex. Add Opacity Keyframe.)
This command does not have a keyboard shortcut defined by default. However, you can assign a keyboard shortcut for it: choose Edit > Keyboard Shortcuts. More information about assigning keyboard shortcuts can be found here:

You can go to Preferences > Audio and change how often Premiere Pro should create Keyframes (simply extend the Milliseconds value to something that makes sense for you).

Actually Audio is nested but it will not replace the Audio in the Sequence if there are clips on multiple tracks selected. So you have to drag in the Nested Sequence again to have the nested Audio as well.

And it would be great timesaver to be able to change the velocity of multiple keyframes at once.
