It is pretty difficult to grab sliders on iOS. It takes me 5-10 tries any given time I’m trying to make fine tuned adjustments. Giving us a feature similar to “skip ahead” for 1 and 10 points of value might be sufficient for small changes, but just getting the interface to recognize that I’m trying to move a slider is obnoxious. I’d recommend increasing the size of the slider mechanism itself so there’s less frustration.

Here's an idea: have the horizontal sliders be gross adjustment, but make it so if you tap on the number itself you can slide it five to ten digits up or down by sliding your finger up or down from the number.

I think you are very generous with “pretty difficult”. On my iPad Pro it can take me 10 to 20 tries, with periods of Zen meditation to recover my composure.
I'm trying to set a vertical videl resolution to 720p (720x1280) and it's hard to set this dimension.
It will be great if the app shows default sizes (square, 720p portrait and landscape and 1080p)
