EPS Antialiasing Preferences
I build most of the graphics for my animations in AI, then import into AE. A lot of the graphics I create are complex and/or rely on gradients. Once they're in AE they look low res and choppy.
Currently, the only solution is to select each individual layer in the Project Panel, click "Interpret Footage," select more options, eps options, antialiasing, then "More Accurate." Not the end of the world, but annoying.
I'd like to request an option to make this easier and quicker to do en masse. Preferably an option within the preferences panel referring to EPS antialiasing. Or the option to select multiple assets and batch the process.

I agree - it would be good to have an option in preferences to set "More Accurate" as the default setting, rather than "Faster". Perhaps just a toggle to set your preferred option as a default?

You mean continuously rasterize? If so, yes.
Have you activated the sun icon in each Illustrator layer within After Effects?
